Sample Menu - A bit about seasonal cooking

Quite simply, the flavor of out-of-season fruits and vegetables does not even remotely compare to those same foods picked at their peak of ripeness.  This quality (or lack thereof) flows all of the way down to the final product which can either be an exciting, memorable experience, or a very under-whelming meal.

I will always seek out the best ingredients the season has to offer and I would never serve anything to anyone I wouldn’t serve my own family.

Samples from a Spring and Summer Menu

  • Salads
      Salad Nicoise--greens with tuna, spring vegetables, and hard boiled eggs
      Arugula Salad with Grilled Porcini Mushrooms
      Spinach Salad with Strawberries, Candied Pecans, and Feta Cheese

  • Soups
      Pasta e Fagioli--pasta and beans in broth
      Papa al Pomodoro--tomato and basil with bread in chicken broth
      Chilled Cucumber soup

  • Pasta
      Gnocchi with Leek Sauce--potato dumplings in a creamy leek sauce
      Gnocchi with Sausage and Fennel--semolina flour dumplings with sausage and shaved fennel
      Lemon Spaghetti

  • Main Dishes
      Chicken Saltimbocca-prosciutto wrapped chicken with sage in a lemon kale sauce
      Roasted Chicken with Herbed Butter
      Morrocan Lamb Tagine--lamb with Moroccan spices in a honey and tomato sauce
        Pulled Pork Sandwiches with a Carolina Style BBQ sauce with Cole Slaw

  • Desserts
      Fresh Fruit Pies--strawberry, blueberry, raspberry, apple
      Lemon or Lime Curd Bars
      Gelati and Ice Cream of various flavors
